The bison skirt steak is prized for its incredible flavor.  Similar to a flank steak, this cut needs to be thinly sliced across the grain to maximize tenderness. The intense flavor makes it great for fajitas and stir fry.  To prepare, grill or pan sear quickly and thinly slice, or cook very slowly, typically braised.
